Refreshing, simple and one of my favorites!

Ingredients
- 1 T coconut oil
- 2 lb ground chicken can substitute ground turkey or walnut "meat"
- 1/4 c ginger grated
- 1.5 c cilantro chopped
- 3/4 c lime juice
- 6 T fish sauce (nam pla)
- 2 T sugar sweetner (can use of your choice including maple syrup)
- 3 T hot water
- 1 c coconut toasted **Yum** Coconut elevates this to a new level)
- 2/3 c peanuts (or crunch of choice - sunflower seeds are one of my faves!)
- 1 cucumber chopped
- alfalfa sprouts
- carrots shredded
- spicy sauce pick your poison - sriracha, jalapenos, thai chili sauce
- 2 heads lettuce remove thick stalk (bibb, romaine, etc)

Instructions
- Cook protein (ground chicken, turkey, pork) in coconut oil. Take out some frustration on it and make sure that the pieces are even and small.
- Switch protein to bowl (if you are using walnut "meat" - this is where it enters the recipe). Add ginger and cilantro to meat and mix together. If you are really adventuresome, add some chopped chilies or jalapenos here.
- In a separate bowl, mix lime juice, nam pla, sweetener and water together and mix into protein mixture.
- Serve with any and all accouterments of your liking on lettuce leaves. I have listed some of my favorites but get colorful and creative!
