Ingredients
- 1 T ghee
- 2 stalks celery finely diced
- 2 each sweet potatoes chopped
- 1/2 head cauliflower chopped
- 2 T cumin
- 3 T curry powder
- 2 T coriander seeds ground
- 1 t salt
- 3.5 c vegetable stock
- 1 can coconut milk
- 5.5 c water
- 2 c lentils
- red peppers diced
- spinach

Instructions
- In a dutch oven, heat ghee and saute celery for 5 mins.
- Add diced sweet potatoes and cauliflower and saute for 10 mins.
- Add spices and swirl it around until there it is evenly distributed.
- Add vegetable stock, coconut milk, water and lentils and simmer over med low heat for an hour. Periodically scrape the foam off the top.
- Ten minutes before serving, add peppers and spinach.
